Irish Guinness Brownies Recipe

Guinness is very popular in Ireland, and it’s used in main dishes and desserts. One of the best ways to use it is in brownies. These Shortcut Irish Guinness Brownies start with Mom’s Brownie Mix which is a big timesaver; I always have it on my pantry shelf. If it’s not already on your shelf, it can be made in about 15 minutes and kept for months. In order to concentrate the Guinness flavor, I boil it in a saucepan until it reduces; it takes only about 15 minutes. I also add espresso powder to bring out the chocolate flavors.

The finished brownies are frosted with a buttery, fluffy frosting flavored with some of the reduced Guinness mixture. This is great for St. Patrick’s Day, or any time you serve Irish food.

1 12 oz. bottle Guinness Stout
2 teaspoons espresso powder

3 cups Mom's Brownie Mix
3 large eggs
1/2 cup reduced Guinness espresso mixture
1 teaspoon vanilla
Frosting
2 cups powdered sugar
1/2 cup butter
2 to 3 tablespoons reduced Guinness espresso mixture
1 teaspoon vanilla

- Preheat oven to 350°. Spray a 11" x 7" shallow baking dish with non-stick spray.
- Pour the bottle of stout into a saucepan; bring to a boil and boil until reduced to about 2/3 cup. Stir in the espresso powder until dissolved. Set aside to cool.
- Place the brownie mix, eggs, and 1/2 cup of the reduced Guinness mixture into a mixing bowl. Mix on low speed; add the vanilla. Pour into the prepared baking dish. Bake 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool thoroughly.
- Frosting: Beat the butter until smooth and creamy. Turn the mixer to low speed and beat in the powdered sugar and enough reduced Guinness mixture to make a soft consistency. Stir in the vanilla and spread over the cooled brownies. Cut into squares and serve.
